Classic French Ratatouille in Cast Iron

- 1 large eggplant - 1 - diced
- 2 zucchinis - 2 - sliced

- 4 sprigs of thyme - 4 sprigs
- 2 bay leaves - 2

Preparation

Step 1 - 🥘🔥💧Heat 2 tablespoons of extra-virgin olive oil over medium heat in your cast iron pot.

Step 2 - 🥘🧅🧄Add 1 finely chopped onion and 3 minced garlic cloves to the pot, sauté them until they turn translucent.

Step 3 - 🍆🥒🌶🍅Dice 1 large eggplant, slice 2 zucchinis, chop 2 colorful bell peppers and dice 4 ripe tomatoes. Add them to the pot, stir in 1 teaspoon of salt and 1/2 teaspoon of pepper.
