Paying homage to Italian culinary traditions, our main course features luxurious crab meat in an unlikely but harmonious combination. The tangy lemons and balsamic reduction balance out the sweetness of the crab, while the fresh mint leaves add a refreshing touch.
Ingredients (for 2)
- Crab meat - 8 oz - picked over for shells
- Fresh mozzarella - 4 oz - cubed
- Tomatoes - 2 medium - cubed
- Fresh mint leaves - 8 - chopped
- Lemon - 1 - zest and juice
- Pasta dough - 8 oz - rolled thin
- Extra virgin olive oil - 2 tbsp
- Balsamic reduction - 2 tbsp
- Salt - to taste
- Pepper - to taste

Step 1 - π¦πΏπCombine the crab meat, mozzarella, tomatoes, mint leaves, and lemon zest in a bowl. Season with salt, pepper, and some lemon juice.

Step 2 - ππ¦π΄Cut the rolled pasta dough into 16 equal squares. Place a spoonful of the crab mixture onto 8 of the squares.

Step 3 - πβοΈπPlace the remaining squares on top of the crab mixture. Press the edges to seal, ensuring there are no air bubbles. Trim the edges if necessary.

Step 4 - π³ππ₯Heat olive oil in a skillet over medium heat. Add the stuffed ravioli and cook until golden brown, about 3-4 minutes per side.

Step 5 - π½οΈππΏPlace the ravioli on plates. Drizzle with the balsamic reduction and sprinkle with additional lemon zest and mint leaves before serving.
