At the centre of a crisp white plate lies a mound of vibrant, slightly curled endive leaves. They are generously sprinkled with tantalizing crispy bacon bits, jewel-like dried cranberries, pearls of creamy goat cheese and thinly sliced pear, with a sprinkle of toasted pine nuts gleaming on top. The plate is adorned with a drizzle of mustard vinaigrette, forming a tempting, edible piece of art.

Play around with the ingredients! Pecans, blue cheese or dried cherries would also work great. You can replace the bacon with roasted butternut squash for a vegetarian alternative. If you have kids around, let them assemble the salad. It's fun, creative and a great way to get them involved!
