Emerald Endive Delight

Surprise your palate with this refreshingly innovative salad! Relish in the unique bitterness of Endive, beautifully balanced by the sweetness of fresh pears and tart cranberries, and punctuated with savory bacon and creamy goat cheese. It is not just a salad, it is an experience!
Ingredients (for 2)
- Endive heads - 2 - leaves separated
- Bacon slices - 4 - cooked and crumbled
- Dried cranberries - 1/2 cup
- Goat cheese - 1/2 cup - crumbled
- Pear - 1 - thinly sliced
- Toasted pine nuts - 2 tablespoons
- Apple cider vinegar - 3 tablespoons
- Dijon mustard - 1 tablespoon
- Honey - 1 tablespoon
- Olive oil - 2 tablespoons
- Salt and pepper - to taste
Preparation

Step 1 - 🥣🍯🥄Whisk together apple cider vinegar, Dijoin mustard, honey, salt, and pepper. Gradually whisk in the olive oil until the dressing is emulsified.

Step 2 - 🥗🍃🥄Place the endive leaves into a large bowl. Drizzle half of the dressing over the endives and toss to coat.

Step 3 - 🍽️🥗🍽️Arrange the dressed endives on two plates.

Step 4 - 🥓🍐🧀Top with crumbled bacon, dried cranberries, crumbled goat cheese, thinly sliced pear, and toasted pine nuts.

Additional
Play around with the ingredients! Pecans, blue cheese or dried cherries would also work great. You can replace the bacon with roasted butternut squash for a vegetarian alternative. If you have kids around, let them assemble the salad. It's fun, creative and a great way to get them involved!
