We're stepping into a unique place where east meets west, which inspired us to create a dessert infused with Thai elements yet keeping the essence of a chilly weather comfort dessert. This dessert centers around the unique blend of sweet and savory, starring spinach and coconut.
Ingredients (for 4)
- Fresh spinach - 2 cups - blanched
- Coconut milk - 1 cup
- Whole milk - 2 cups
- Heavy cream - 1 cup
- Sugar - 1/2 cup
- Pandan extract - 1 teaspoon
- Unflavored gelatin - 1 tablespoon
- Water - 1/4 cup - cold
- Desiccated coconut - 1/2 cup - toasted for garnish

Step 1 - ๐ฅฌ๐ฅฅ๐In a blender, mix the blanched spinach and coconut milk together until it's smooth. After blending, set the mixture aside for later use.

Step 2 - ๐ฅ๐ถ๐ฅIn a saucepan, combine the whole milk, heavy cream, sugar, and pandan extract. Heat the mixture on medium, stirring until the sugar has fully dissolved.

Step 3 - ๐ฆ๐ง๐ฝPick a small bowl, and sprinkle the unflavored gelatin over cold water, let it sit for a few minutes. Then, add this gelatin mixture to the warmed milk mixture.

Step 4 - โ๐๐ฎOnce the gelatin is completely dissolved, remove the mixture from heat. Pour evenly into four serving molds, then refrigerate for a minimum of 4 hours or until it is completely set.

Step 5 - ๐ฅ๐ฅฅ๐ฎJust before serving, gently heat up the spinach and coconut blend. Pour this warm blend over the set panna cotta. Make it even more delicious by garnishing with toasted desiccated coconut.
Additional
For a vegan version, replace the dairy with almond milk and cream of coconut, and swap gelatin for agar agar.
