This unconventional fusion twist on crusty bread incorporating endive will be hard to forget. The bitterness of endives pairs wonderfully with sharp cheese and sweet, caramelized onions for a unique combination of flavors.

Ingredients (for 2)

Preparation

  1. Step 1 - 🚿✂️🥬
Wash and trim off the bitter part at the base of endives. Chop them into small pieces.
  2. Step 2 - 🍳🧅🍬
Heat oil over medium heat in a frying pan. Add the onions, sprinkle with sugar and stir until caramelized.
  3. Step 3 - 🍞🧂💧
Combine bread flour, dry yeast, and salt in a large bowl. Add warm water and mix until dough starts to form.
  4. Step 4 - 👐🍞⏲️
Knead the dough for about 10 minutes until it becomes smooth and elastic.
  5. Step 5 - 🥣🍞⏳
Oil another bowl, move the dough into it and cover. Allow it to rise for 1.5 hours or until doubled in size.
  6. Step 6 - 🔥🌡️⏲️
Preheat your oven to 375 degrees F (190 degrees C).
  7. Step 7 - 🧅🧀🥬
Roll out the dough into a flat round. Spread caramelized onions on it, then the chopped endives, and sprinkle grated cheese overtop.
  8. Step 8 - 📃🥖🪁
Fold the edges of the dough over the ingredients. Flip the loaf onto a baking sheet lined with parchment paper with the folded-side facing down.
  9. Step 9 - 🔥⏲️🍞
Bake for about 30-35 minutes or until golden brown. Let it cool before slicing.

Additional

Have fun making a bread loaf from scratch - kids can definitely pitch in for kneading dough. This bread would pair beautifully with a light tomato bisque or a simple salad. For a different twist, replace mozzarella with blue cheese or goat cheese.
