Ingredients (for 4)
- Shrimp - 1 cup - cleaned and deveined
- Ripe mangoes - 2 - diced
- Red onion - 1/2 - finely chopped
- Green chili - 2 - finely chopped
- Lime juice - 2 tbsp
- Mint leaves - handful - finely chopped
- Semolina (sooji) - 1 cup
- Yogurt - 1/2 cup
- Water - 1/2 cup
- Baking soda - 1/2 tsp
- Salt - to taste
- Oil - 2 tbsp

Step 1 - 🥣💦😋Combine semolina, yogurt, water, a pinch of salt, and baking soda in a bowl. Let the batter rest for 15 minutes.

Step 2 - 🥭🌶️😛In a separate bowl, mix diced mangoes, chopped red onion, green chili, lime juice, and half of the chopped mint leaves. Place the salsa in the refrigerator to chill.

Step 3 - 🍤🔥🍴Heat a tablespoon of oil in a pan. Add the shrimp and cook until they turn pink. Set the cooked shrimp aside.

Step 4 - 🍳🥞😊Pour a ladle full of the semolina batter onto a heated non-stick pan, similar to making a pancake.

Step 5 - 🍤🍳👍Arrange the cooked shrimp on top of the batter in the pan, gently pressing them into the batter. Drizzle some oil around the edges and cook until it turns light golden-brown.
