Greek-Style Breakfast Skillet with Brussels Sprouts

This Greek-inspired breakfast is unexpected yet delightful, featuring Brussels sprouts as a star player. It is rich with Mediterranean flavors of fresh herbs, feta and olives, creating a rejuvenating start to your day.
Ingredients (for 4)
- Brussels sprouts - 500g - trimmed and halved
- Free range eggs - 4
- Feta cheese - 100g - crumbled
- Kalamata olives - 1/4 cup - pitted
- Fresh dill - 3 Tbsp - chopped
- Fresh parsley - 3 Tbsp - chopped
- Red chili flakes - 1 Tsp
- Extra virgin olive oil - - for frying
- Salt - - to taste
- Pepper - - to taste
Preparation

Step 1 - 🔥🍳🥬Heat the olive oil in a large skillet over medium-high heat. Add Brussels sprouts, season with salt and pepper. Sauté until they are browned and crispy.

Step 2 - 🍳🥚⏲️Reduce the heat to medium. Push the Brussels sprouts to one side of the skillet and crack the eggs onto the other side. Cover the skillet and cook until the egg whites set.

Step 3 - 🧀🫒🌶️🌱Scatter the feta cheese, olives, chili flakes, dill, and parsley over the sprouts and eggs.

Step 4 - ⏲️😌🍽️Remove the skillet from the heat and leave it covered for 2 minutes, allowing the residual heat to soften the cheese.

Additional
You can replace Brussels sprouts with Cabbage, Kale, or Broccoli. Also, try adding a bit of lemon zest over your dish before serving for an extra fresh note. Even kids can help with cracking the eggs or sprinkling the herbs and feta cheese!
