Ingredients (for 2)
- Medium radish - 2 - finely grated
- Ripened guava - 2-3 - pureed
- Large lemon - 1 - zest and juice
- Pink himalayan salt - a pinch
- Agave syrup - 3 tbsp
- Water - 1 cup
- Dessicated coconut - 1/2 cup
- Egg white - 1 - (for Vegan, use aquafaba)
- Cane sugar - 2 tbsp
- Fresh mint leaves - a few - for garnish

Step 1 - π₯£ππIn a bowl, combine grated radish, guava puree, lemon juice, lemon zest, agave syrup, and a pinch of pink Himalayan salt. Freeze the mixture for 2-3 hours.

Step 2 - βοΈπ§π₯ΆOnce the mix is frozen, blend until it's smooth and fluffy. Then transfer it to a container and freeze again until it's time to serve.

Step 3 - π₯π‘οΈπPreheat your oven to 350Β°F (180Β°C) for the coconut tuile.

Step 4 - π₯₯π₯£πCombine the desiccated coconut, egg white (or aquafaba), and cane sugar in another bowl. Mix thoroughly until the mixture is sticky.

Step 5 - π₯π₯ π₯Spread the mixture thinly into the desired shape on a baking sheet lined with parchment paper. Bake it for 10-15 minutes until it's golden, then let it cool and firm up.
