Honey-Glazed Bacon Escarole Bites

This snack features the slightly bitter, yet pleasantly crunchy escarole, a hearty green that stands up to the exciting flavors of our other key ingredients. Combined with savory bacon and a hint of sweetness from golden honey, it creates a unique snack experience that's far from the typical fare.
Ingredients (for 2)
- Small head of escarole - 1 - leaves separated and washed
- Bacon strips - 6 - cut into small pieces
- Honey - 3 tablespoons
- Crushed red pepper flakes - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Olive oil - 1 tablespoon

Step 1 - 🍳🥓➡️Preheat a skillet over medium heat, add the bacon cut into small pieces and cook until crispy. Then, remove the bacon and set it aside. Make sure to leave only about a tablespoon of fat in the skillet.

Step 2 - 🥘🥬💫In the same skillet, add the small head of escarole leaves. Sauté them for 2-3 minutes, or until slightly wilted.

Step 3 - 🍯🥓🧂🌶️Drizzle 3 tablespoons of honey over the sautéed escarole leaves, then add the cooked bacon pieces, tossing to combine them together. Season the mixture with salt and black pepper to taste, and sprinkle it with 1/2 teaspoon of crushed red pepper flakes.
