Honey Mustard BBQ Chicken with Peach Salsa

Ingredients (for 4)
- Chicken thighs - 4
- Honey - 2 tbsp
- Dijon mustard - 2 tbsp
- Smoked paprika - 1/2 tsp
- Fresh corn - 2 ears
- Ripe peaches - 2
- Red onion - 1/2
- Small jalapeno - 1
- Olive oil - 1 tbsp
- Salt -
- Black pepper - - to taste

For a smokier flavor, soak some hickory wood chips in water for an hour and add them to the charcoal or smoker box. If you prefer more heat, leave the seeds in the jalapeno. This recipe is also great with pork tenderloin or firm white fish like mahi-mahi.
