We're celebrating International Chef's Day with a nod to renowned chef, Julia Child, and her iconic dish - Coq Au Vin. This dish uses chicken as the star, steeped in a rich red wine, with aromatic vegetables and spices.

    Preheat your oven to a temperature of 350°F (175°C).

    In a large, oven-safe casserole dish, cook the sliced bacon over medium heat until crisp. Once cooked, transfer the bacon to a large plate.

    In the same casserole dish, brown the cut pieces of chicken on all sides. Transfer the browned chicken to the plate with the cooked bacon.

    Using the same dish, sauté the cleaned button mushrooms and pearl onions until the onions turn golden brown.

    Stir in the flour into the dish, followed by pouring in the red wine. While adding these, make sure to scrape off any bits stuck at the bottom of the dish.

    Next, add the chicken stock, finely chopped garlic, fresh thyme, bay leaves, cooked chicken, and bacon into the dish. Season with salt and freshly ground black pepper.

    Cover the dish and let it bake in the preheated oven for roughly 30 minutes.
