Today in honor of International Chef's Day, we are creating an iconic dish from the repertoire of the world-renowned chef, Julia Child - her irresistible Boeuf Bourguignon. This classic French beef stew, cooked with red wine and flavorful vegetables, transforms a humble cut of meat into a culinary masterpiece.
Ingredients (for 6)
- Beef chuck - 2 lb - cut into 2 inch chunks
- Quality red wine (like burgundy or pinot noir) - 3 cups
- Carrots - 3 medium - peeled and sliced
- Yellow onions - 4 - peeled and quartered
- Fresh mushrooms - 2 cups - quartered
- Pearl onions - 1 cup - peeled
- Garlic cloves - 2 - minced
- Beef stock - 2 cups
- Tomato paste - 2 tablespoons
- Fresh thyme - 2 sprigs
- Bay leaf - 1
- Flour - 3 tablespoons
- Olive oil - - to coat the pan
- Salt and pepper - - as per taste
- Fresh chopped parsley - - for garnish
Preparation

Step 1 - π‘π₯β²Preheat your oven to 325Β°F (165Β°C).

Step 2 - π₯©π³π₯In a large Dutch oven, coat in olive oil and brown the 2 lb beef chunks over medium-high heat. Once done, remove and set aside.

Step 3 - π₯π§ π³In the same Dutch oven, brown the sliced carrots and quartered yellow onions. Add 2 minced garlic cloves and cook till fragrant.

Step 4 - π₯©π₯πReturn the beef to the Dutch oven, sprinkle with 3 tablespoons of flour. Mix it with the cooked vegetables and cook for a few minutes.

Step 5 - π·π₯£πΏStir in 3 cups of red wine, 2 cups of beef stock, 2 tablespoons of tomato paste along with a sprig of thyme and a bay leaf. Bring the mixture to a gentle simmer.

Step 6 - π₯β²π₯Cover the pot with a lid and place it in your preheated oven. Let it cook for 2 hours.

Step 7 - π§ πβ²Add 1 cup of peeled pearl onions and 2 cups of quartered mushrooms to the pot. Return the pot to the oven for an additional hour of cooking.

Step 8 - π§πΏπRemove pot from the oven and season the dish with salt and pepper as per your taste. Garnish with fresh chopped parsley before serving. Enjoy your dish while it's hot.
