This recipe is a unique twist on the American classic using fresh, juicy mussels, zesty lime, and seasonal herbs. The Kokomo Mussels will transport you to a comforting, cozy gathering with friends and family.
Ingredients (for 4)
- Mussels - 2 lb - cleaned
- Limes - 2 - zested and juiced
- Chicken broth - 2 cups
- White wine - 1 cup
- Garlic cloves - 4 - minced
- Red chili peppers - 2 - thinly sliced
- Olive oil - 1/4 cup
- Dill - 1 cup - chopped
- Cilantro - 1 cup - chopped
- Garlic bread - 4 pieces
- Salt - to taste
Preparation

Step 1 - 🍲🌶️🔥Heat olive oil in a large pot over medium heat. Add minced garlic and thinly sliced red chilies until fragrant.

Step 2 - 🍷🥘⏲️Add the cleaned mussels to the pot. Pour in the white wine and chicken broth. Cover and let it steam for 5-7 minutes or until the mussels have opened.

Step 3 - 🍋🌿🧂Stir in the lime zest, lime juice, chopped dill, chopped cilantro, and add salt to taste.

Step 4 - 🥣🥖🍴Serve the mussels in shallow bowls. Be sure to spoon some sauce over each serving. Garnish with extra herbs and serve with garlic bread on the side.

Fun Fact: Mussels have been cultivated for almost 800 years and have been used as a food source for more than 20,000 years. Modifications: If you're not a fan of spice, you can leave out the red chilies. Kids can help to clean the mussels and pluck the herbs.
