
La Chandeleur Crêpes with Cream Cheese and Fruit Garnish

Bon Appetit, it's La Chandeleur - the French pancake day! Let's celebrate by making some traditional French crêpes. These crêpes are light, tender and lacy, made with just the basics - flour, eggs, milk, and butter; then we give it a twist by filling it with cream cheese and garnishing with fruits to make it truly delightful and visually stunning.
Ingredients (for 6)
- All-purpose flour - 1 cup - sifted
- Eggs - 2 - large, beaten
- Milk - 1.5 cups - preferably whole
- Butter - 2 tablespoons - melted plus some for cooking the crêpes
- Cream cheese - 1 cup
- Fruit - 1 cup - strawberries, blueberries, kiwi - diced
- Powdered sugar - for dusting
- Salt - a pinch

Step 1 - 🍚🍳🥣In a bowl, whisk together the sifted all-purpose flour and beaten eggs. Gradually add in the milk, whisking to combine. Add a pinch of salt and melted butter; beat until smooth.

Step 2 - 🍳🔥🍴Heat a lightly buttered frying pan over medium-high heat. Pour approximately 1/4 cup of the crêpe batter into the pan and tilt the pan in a circular motion to evenly coat the surface. Cook the crêpe for about 2 minutes until the bottom is light brown. Flip it over with a spatula and cook the other side.

Step 3 - 🧀🥞🔂Spread a layer of cream cheese on the cooked crêpe and fold it into a triangle. Repeat the process for the remaining batter.

Step 4 - 🍓🥝🍽Finally, top your crêpes with the diced fruits and a dusting of powdered sugar. Serve immediately.

Did you know, in France it's customary to hold a coin in your writing hand and the crêpe pan in the other, and flip the crêpe into the air. If you manage to catch the crêpe in the pan, your family will be prosperous for the rest of the year. So, why not test your luck and try the flip while making these crêpes. Note: For a healthier version, you can use whole wheat flour and fill with Greek yogurt and berries.
