- Bone-in, skin-on chicken thighs - 4
- Pure maple syrup - 1/2 cup
- Dijon mustard - 1/4 cup
- Apple cider vinegar - 1 tablespoon
- Smoked paprika - 1/2 teaspoon
- Medium carrots - 4 - peeled and chopped into 2-inch pieces
- Red potatoes - 4 - chopped into 1 1/2-inch pieces
- Dried thyme - 1/2 teaspoon
- Salt - to taste
- Pepper - to taste
- Olive oil - 1 tablespoon

Step 1 - 🍁🧂🍯Combine maple syrup, dijon mustard, apple cider vinegar, smoked paprika, salt, and pepper.
