This recipe is a delightful twist to the classic Basque cheesecake with a touch of Asia. It gives a soft, creamy and crumbly texture topped with coarse pink salt that adds a nice crunchy kick to your palate. Ingredients (for 8)
- Cream cheese - 8 oz - room temperature
- Granulated sugar - 3/4 cup
- Heavy cream - 1/2 cup
- All-purpose flour - 1/4 cup
- Eggs - 2 - room temperature
- Matcha powder - 2 tbsp
- Coarse pink salt - 1/4 tsp
- Unsalted butter - 3 tbsp - melted and cooled

Step 1 - 🌡️🧈🆕Preheat the oven to 400°F (200°C) and grease an 8-inch (20 cm) springform pan with melted butter.

Step 2 - 🥣🧀🍬In a large mixing bowl, beat cream cheese with an electric mixer until smooth. Gradually add sugar while continuing to mix until the mixture is fluffy.

Step 3 - 🥛🧈🌾Then add heavy cream, melted butter, and flour, and mix until the batter is smooth.

Step 4 - 🥚🔨Beat in eggs one at a time until fully incorporated with the batter.

Step 5 - 🍵🌈Sift or whisk matcha powder and fold it into the batter.

Step 6 - 🥣🛢️🕺Pour the batter into the prepared pan and tap the pan gently on the countertop to release air bubbles.

Step 7 - 👨🍳👨🍳🔥Bake for 50 to 55 minutes until the top is deeply golden brown and almost burnt looking.

Step 8 - ❄️🍰🎨Allow the cake to cool completely before removing from the pan. Dust the top with matcha powder and sprinkle the coarse pink salt on top.
