This extraordinary BBQ dish reimagines tradition by merging Mediterranean flavours with a summertime staple. The richness of beets is complemented by fresh herbs and tangy feta.
Ingredients (for 4)
- Large beets - 4 - peeled and quartered
- Medium zucchinis - 2 - sliced into thick rounds
- Large red onion - 1 - cut into 1-inch pieces
- Feta cheese - 1 cup - crumbled
- Parsley - 4 Tbsp - finely chopped
- Mint - 4 Tbsp - finely chopped
- Olive oil - 1/4 cup
- Lemon - 1 - juiced and zested
- Honey - 2 Tbsp
- Salt - 1 tsp
- Black pepper - 1/2 tsp

Step 1 - ðĨððĄïļPreheat your BBQ grill to medium heat.

Step 2 - ð°ðēðĨPlace beet quarters in a pot of water and bring to a boil. Simmer until just tender, about 15 minutes. Then, drain and let them cool.

Step 3 - ðŊðð§In a large bowl, combine olive oil, lemon juice, lemon zest, honey, salt, and pepper.

Step 4 - ðĨĢðĨĶðAdd cooled beets, zucchini, and red onion pieces to the bowl. Toss until well coated with the dressing.

Step 5 - ðĒðð§Thread the veggies onto skewers, alternating beets, zucchini, and onion.
