This unique smoothie brings together the healthful properties of Mediterranean cuisine to give you a warm, luxurious beverage loaded with goodness. The key ingredient, leek, is often overlooked but adds a delicate sweet onion flavor that plays beautifully against the tangy Greek yogurt and sweet pomegranate.
Ingredients (for 4)
- Medium leek - 2 - trimmed, cleaned, and chopped into thin slices
- Fresh pomegranate juice - 2 cups
- Greek yogurt - 1/2 cup, plus extra for garnish
- Unsweetened almond milk - 1 cup
- Large ripe banana - 2 - peeled and chopped
- Honey - 2 tablespoons, plus extra for drizzling
- Cinnamon - 1/2 teaspoon, plus extra for garnish
- Fresh spinach - 1 cup - washed
- Ice - 2 cups

Step 1 - 🥘🔥🍃Heat a saucepan over medium heat and add the chopped leek. Cook until it becomes soft and lightly golden, stirring occasionally. Let it cool completely.

While this delightfully unique smoothie is wonderful on its own, feel free to switch things up! You can substitute spinach with kale for an earthier flavor. Also, children will love helping with the fun garnishing part, which also makes the smoothie look more exciting!
