Ingredients (for 4)
- Raw mussels - 24 - cleaned and de-bearded
- Chorizo - 200g - finely diced
- Red chillies - 2 - finely diced
- Garlic cloves - 4 - minced
- Dry white wine - 1 cup
- Linguine - 400g
- Olive oil - 2 tablespoons
- Fresh cilantro - 1 cup - finely chopped
- Salt and pepper - to taste
- Lime - 1 - juiced
- Lime - zest of 1 - grated

Step 1 - 🍳🔪🥩Start by sautéing the finely diced chorizo in a large, deep pan over a medium heat until crispy

Step 2 - 🧄🌶️🍳Add the minced garlic and diced red chillies to the pan, and continue to cook until fragrant

Step 3 - 🍷🥘🔥Pour in the cup of dry white wine to the pan and bring the sauce to a simmer

Step 4 - 🍝💦🔥Simultaneously, in another pot, boil the linguine until al dente

Step 5 - 🥘🍲🔝Add the cleaned mussels to the chorizo and wine mixture, cover and continue to cook until the mussels have opened

Step 6 - 🍝🍲🔄Drain the cooked pasta, reserve some of the pasta water. Toss the pasta in olive oil and mix in the chorizo, garlic and wine sauce

Step 7 - 🥣💦➕If required, add some of the reserved pasta water in order to bring the dish to your desired level of sauciness

Step 8 - 🍝🍽🎊Plate the pasta, top with mussels, sprinkle some freshly chopped cilantro, lime juices and zest before serving

You can involve kids by letting them toss the pasta into the sauce. Feel free to vary the heat level of the dish by adjusting the amount of chili added. Pair this dish with a crisp white wine to cut through the richness.
