A pristine white mountain of shaved ice is riveting against the backdrop of a traditional Korean bowl. The dessert is generously studded with golden-hued caramelized new potatoes, contrasting beautifully against the pure white ice. Ribbons of honey, glistening in the light, cascade down the ice, pooling at the bottom of the bowl. A generous dusting of ground cinnamon adds an earthy touch, while sprigs of fresh mint atop the dessert add a pop of vibrant green, enhancing the overall aesthetics of the dish.

Additional

Though unconventional in dessert usage, potatoes have a history in sweet dishes. Irish potato candy is one wonderful example. Bingsu is traditionally a dessert made with shaved ice and various toppings, ideal for a misty, not too hot day. If desired, cinnamon can be swapped with ground nutmeg or even a sprinkle of cacao. Kids can help drizzle the honey or garnish the dessert.
