This one sheet tray oven recipe with golden potatoes, asparagus and chicken is easy to prepare and perfect for a sunny and warm day. The three key ingredients are nutritious and well-balanced for a complete meal. Plus, the addition of lemon and rosemary bring brightness and freshness to the dish.
Ingredients (for 4)
- Boneless and skinless chicken breasts - 4 - cut into bite-sized pieces
- Golden potatoes - 1 pound - cut into bite-sized pieces
- Bunch asparagus - 1 large - trimmed
- Cloves garlic - 4 - minced
- Lemons - 2 - juiced and zested
- Olive oil - 3 tablespoons
- Honey - 2 tablespoons
- Fresh rosemary - 2 tablespoons - chopped
- Smoked paprika - 1/2 teaspoon
- Salt - - to taste
- Pepper - - to taste
Preparation

                    Step 1 - π‘οΈπ₯π¨βπ³Preheat oven to 425Β°F.
- 
                    Step 2 - π₯π΄π₯Add the cut potatoes to a large bowl and toss with 1 tablespoon olive oil, half of the minced garlic, salt, pepper, and smoked paprika. Spread in an even layer on a sheet pan and roast for 20 minutes.

                    Step 3 - ππΏπIn the same bowl, mix the remaining olive oil, garlic, lemon juice, lemon zest, honey, rosemary, salt, and pepper. Add chicken breasts and coat well.

                    Step 4 - π₯ππ₯After 20 minutes of roasting the potatoes, remove the pan from the oven and add the asparagus around the potatoes. Place the chicken on top of the vegetables and return to the oven for another 20-25 minutes or until the chicken is cooked through.

                    Step 5 - ππΏπ΄Squeeze fresh lemon wedges over the entire sheet tray before serving.

This dish can be easily modified by adding different vegetables, like bell peppers or carrots. Kids can help with washing and trimming asparagus, tossing the potatoes in spices, and mixing the lemon rosemary marinade.
