Today, we're bringing the flavor of vibrant Brazilian cuisine to keto-friendly dining with a less predictable twist. Our hero ingredient is the Palmito, a delicious heart of palm that lends itself perfectly to our unique take on 'Pão de Queijo', traditionally a cheesy bread roll, which we've transformed into a unique savory tart.

Ingredients (for 2)

Preparation

  1. Step 1 - 🔥🌡️🔲
    Preheat the oven to 180°C (350°F) and lightly oil a tart tin.
  2. Step 2 - 🥣🧀🥚
    In a bowl, mix 150g almond flour, 50g of shredded mozzarella, 50g of shredded parmesan, 1 beaten egg, salt to taste and half of the 2 minced garlic cloves to form a dough.
  3. Step 3 - 🤚🥖🔲
    Press the dough evenly into the tart tin.
  4. Step 4 - 🔥🕚🥖
    Bake for 10-15 minutes until slightly golden.
  5. Step 5 - 🔥🍳🌴
    While the crust is baking, sauté the 2 thinly sliced Heart of Palm (Palmito) in 1 tbsp of olive oil and remaining minced garlic until tender.
  6. Step 6 - 🥄🍅🧀
    Spread 100g of softened cream cheese on the baked tart crust, followed by the sautéed Palmito, 100g of halved cherry tomatoes and sprinkle some more shredded mozzarella and grated parmesan cheese on top.
  7. Step 7 - 🔥🕑🧀
    Bake for another 15-20 minutes until cheeses are melted and bubbly.
  8. Step 8 - 🍀🥗🍽️
    Top it with a handful of fresh arugula before serving.

Additional

Although Pão de Queijo is traditionally a bite-sized cheese bread, repurposing it as a tart base opens up a world of possibilities for creative keto meals. Bonus: this dough also makes delicious cheese-sticks or 'biscuits' for an appetizer or snack! Feel free to play around with the toppings based on seasonal availability or personal preference.
