Falling leaves have inspired this Mediterranean dish with a twist, crafting a vibrant amalgamation of flavors anchored by Radicchio, a vibrant-purple veggie that thrives in cool weather. Its slightly bitter profile is perfectly balanced by sweet pears, tangy goat cheese, and a delectable balsamic glaze.
Ingredients (for 4)
- 1 large head radicchio - 1 large head - chopped
- 2 pears - 2 - diced
- 4 (6 ounce each) salmon fillets - 4 (6 ounce each) - none
- ½ cup pomegranate seeds - ½ cup - none
- 4 ounce goat cheese - 4 ounce - crumbled
- ½ cup walnuts - ½ cup - chopped and toasted
- 4 tbsp olive oil - 4 tbsp - none
- 4 tbsp balsamic vinegar - 4 tbsp - none
- 2 tsp honey - 2 tsp - none
- Salt - to taste - none
- Black pepper - to taste - none
Preparation

Step 1 - 🧂🐟🌶️Season the salmon fillets with salt and pepper on both sides.

Step 2 - 🍳🐟🔥In a non-stick pan, add 2 tablespoons of oil and sear the salmon fillets over medium-high heat for about 4 minutes each side. Once done, set aside.

Step 4 - 🥗🍐🧀Add the chopped radicchio, diced pears, goat cheese, pomegranate seeds, and toasted walnuts into the bowl with the dressing and toss to combine.

Radicchio changes color and softens a bit when heated. If you prefer a softer texture and a more subtle flavor, you may opt to roast it for a few minutes before mixing with the salad. An excellent substitute for goat cheese could be chunks of feta or for a dairy-free option, try using roasted halved Brussels sprouts.
