We celebrate Pi Day with a 'Pi-symbol Raspberry Pie' - a unique take on the traditional raspberry pie. It uses fresh raspberries, complemented with the delightful crunch of almond crumble. The 'pi' symbol on top of the pie pays a playful tribute to this mathematical constant.

    In a saucepan, mix 2 lbs of fresh raspberries, 1/2 cup of sugar, and 3 tbsp of cornstarch dissolved in 2 tbsp of water. Bring to boil until the mixture thickens. Stir in 1 tsp of almond extract.
