
Plum-adilla Brunch Casserole

This brunch recipe takes a semi-sweet fruit, the plum, and incorporates it into a classic American dish with a twist. We're using the plum's juicy and slightly tart flavour to create a balance with the savoury and creamy elements present in the dish.
Ingredients (for 4)
- Ripe plums - 4 - pitted and sliced
- Whole grain tortillas - 8
- Eggs - 4 - beaten
- Shredded cheddar cheese - 2 cups
- Milk - 1 cup
- Red onion - 1 - chopped
- Garlic cloves - 2 - minced
- Salt - to taste
- Pepper - to taste
- Oil - - for greasing
- Fresh parsley - - for garnish

Step 1 - 🌡️🔥🥘Preheat the oven to 350 degrees Fahrenheit. Grease a 9x13 baking dish.

Step 2 - 🌮🥘👇Place half of the whole grain tortillas at the bottom of the baking dish.
