Ingredients (for 4)
- Large bell peppers (mix of red, yellow, and orange) - 4 - halved and deseeded
- Cloves of garlic - 2 - finely chopped
- Gluten-free bread crumbs - 1 cup
- Freshly chopped parsley - 1/2 cup
- Fresh thyme leaves - 1/4 cup
- Olive oil - 1/4 cup
- Salt and pepper - to taste
