Juicy, roasted chicken thighs are served alongside a creamy black bean and sweet potato mash, and a tangy cilantro lime slaw.     Preheat your oven to 400°F (200°C).

    Place the chicken thighs skin-side up on a baking sheet and sprinkle generously with salt and pepper. Roast for 25-30 minutes or until the internal temperature reaches 165°F (74°C).

    Boil the cubed sweet potato in salted water until tender, about 15 minutes. Drain and mash the sweet potato in a bowl, then stir in the black beans, minced garlic, lime juice and zest, and cilantro. Season with salt and pepper to taste.

    In another bowl, make the cilantro lime slaw. Whisk together the mayonnaise, sour cream or yogurt, honey, lime juice and zest. Add the sliced cabbage and shredded carrot, and toss until coated with the dressing. Season with salt and pepper to taste.

    When the chicken is done, let it rest for a few minutes before serving.
  6. Step 6 - 🍖🍛👌🧅🍟🍚
    Spoon some black bean sweet potato mash onto each plate and place a chicken thigh on top. Serve with a generous helping of cilantro lime slaw on the side.
