This recipe takes a classic winter warming comfort food and gives it a fresh, green twist. Tender marinated pork loin is roast to succulence, paired with a vibrant side of mustard greens sautéed in garlic and lemon zest, it's a tasty revelation. Mustard greens, the hero of this dish, are a nutritional powerhouse packed with vitamins and have a unique peppery flavor which goes beautifully with savory pork.

Preparation

    Preheat the oven to 375°F (190°C)
  2. Step 2 - 🍖🌿🧂⏳
    Marinate the 2 lbs of pork loin with half the garlic, rosemary, 1.5 tablespoons of olive oil, salt and black pepper. Let the pork sit in the marinade for about 30 minutes.
  3. Step 3 - 🍖🔥⏲️
    Place the marinated pork on a roasting rack and put it in the preheated oven. Let it cook for about 60 minutes or until the internal temperature of the pork reaches 145°F (63°C).
  4. Step 4 - 🌿🔥🍳
    Ten minutes before the pork is done, heat a large skillet over medium heat. Add the remaining 1.5 tablespoons olive oil. Fry the remaining garlic until it is fragrant. Add the 2 bunches of mustard greens and cook them until they wilt. Season the greens with salt and pepper.

    Finish your mustard greens by adding the zest and juice of 1 lemon.
  6. Step 6 - 🍽️🍖🌿
    Post-roast, allow the pork to rest for 10 minutes before slicing. Serve the slices with the mustard greens on the side.
