Forget about the classic French Onion Soup! We're taking its comforting taste and warmth and reinventing it into a savory French Onion Tart, perfect for brunch. The caramelized onions bring out a rich flavor, enhanced by the thyme and Gruyere cheese.
Ingredients (for 4)
- Onions — 3 — thinly sliced
- Gruyere cheese — 1.5 cups — grated
- Fresh thyme — 1 tablespoon — chopped
- Eggs — 2 — beaten
- Heavy cream — 1/2 cup
- Puff pastry — 1 sheet — defrosted
- Unsalted butter — 2 tablespoons
- Salt and pepper — to taste

Step 1 — 🌡️🍞🔪Preheat your oven to 400°F (200°C). Take 1 sheet of defrosted puff pastry, roll it out into a tart pan and prick the bottom with a fork. Bake for 15 minutes until lightly golden.

Step 2 — 🍳🧅🔥As the pastry bakes, heat 2 tablespoons of unsalted butter in a pan over medium heat. Add in 3 thinly sliced onions and cook until caramelized, roughly 20 minutes. Season with salt, pepper, and 1/2 tablespoon of chopped thyme.

Step 3 — 🥚🥛🧀In a bowl, combine 2 beaten eggs, 1/2 cup of heavy cream, and 3/4 cup of grated Gruyere cheese. Add a pinch of salt and pepper to taste.
