Ingredients (for 2)
- Duck breast, skin on - 2
- Medium celery root - 1 - peeled and cut into 1-inch cubes
- Haricots verts - 6 oz - trimmed
- Blackberries - 1/2 cup plus 2 extra
- Heavy cream - 1/4 cup
- Unsalted butter - 2 tbsp - divided
- Small shallot - 1 - finely minced
- Garlic clove - 1 - smashed
- Fresh thyme - 4 sprigs - divided
- Chicken stock - 1/3 cup
- Dijon mustard - 1 tbsp
- Crème fraîche - 1 tbsp
- Lemon juice - 1 tbsp
- Apple cider vinegar - 1 tsp
- Olive oil - 1 tbsp
- Flaky salt - 1/2 tsp - for finishing
- Kosher salt - 3/4 tsp plus more to taste
- Black pepper - 1/2 tsp
