Ingredients (for 2)
- Shiitake mushrooms - 8 oz - de-stemmed, cleaned and sliced
- Small soft corn tortillas - 4
- Large ripe tomato - 1 - diced
- Fresh corn kernels - 1/2 Cup
- Fresh cilantro - 1/4 Cup - chopped
- Chipotle pepper in adobo sauce - 1 Tbsp - finely chopped
- Extra virgin olive oil - 1 Tbsp
- Lime - Juice of one
- Salt - to taste
- Fat-free greek yogurt - 1/2 Cup - optional
- Paprika - 1 Tsp - for garnishing
