- 1 large fennel bulb - 1 - thin sliced, (reserve fronds for garnish)
- 2 chicken thighs, boneless and skinless - 2 - chopped
- Andouille sausage - 1/2 Cup - sliced
- 1 can of red kidney beans - 1 Can - drained
- 1 onion - 1 - chopped
- 4 cloves of garlic - 4 Cloves - minced
- 1 red bell pepper - 1 - chopped
- Cajun seasoning - 1 Tbsp
- Smoked paprika - 1 Tsp
- Low-sodium chicken stock - 4 Cups
- Olive oil - 2 Tsps
- Salt - to taste
- Freshly ground black pepper - to taste

Step 1 - 🍳🍗🔥Heat olive oil in a pan over medium heat. Add chicken thighs and sausage and cook until they turn brown.
