Smoking Celery-Kissed BBQ Chicken

This recipe infuses the earthy crunch of celery into the smokey goodness of barbecued chicken. The natural salinity of the celery accentuates the spices in the BBQ rub, while a tangy surprise awaits courtesy of a celery-infused BBQ sauce.
Ingredients (for 4)
- Celery stalks - 4 - finely chopped
- Chicken quarters - 4
- Olive oil - 4 tablespoons
- Bbq rub - 3 tablespoons
- Crushed celery seeds - 1 tablespoon
- Bbq sauce - 1 cup
- Light brown sugar - 2 tablespoons
- Apple cider vinegar - 1 tablespoon
- Salt - as per taste
- Black pepper - as per taste
- Parsley - a small bunch - roughly chopped for garnish

Step 1 - π₯ππ‘οΈPreheat your BBQ on medium heat.

Step 2 - ππ§πΏRub chicken quarters with olive oil, BBQ rub, crushed celery seeds, salt, and pepper.

Step 3 - ππ₯β²οΈCarefully place chicken boards on the BBQ and cook covered for about 20-25 minutes turning occasionally until the chicken is perfectly cooked.

Step 4 - πͺπ₯¬π―Mix finely chopped celery stalks, BBQ sauce, light brown sugar, and apple cider vinegar in a saucepan over medium heat. Simmer until it reduces to a glossy sauce.

Step 5 - ππ₯¬π₯£Once the chicken is done, baste it with the celery-infused BBQ sauce and cook for another two minutes.

Step 6 - π½οΈπΏπPlate the chicken, garnish with parsley and serve hot with the remaining BBQ sauce on the side.
Additional
Kids can help with brushing the BBQ sauce on the chicken. For a vegetarian version, substitute chicken with portobello mushrooms. If you're not a fan of parsley, cilantro makes a great alternative.
