This southern-inspired main course is a twist on classic shrimp and grits, perfect for a cool May evening. Featuring fresh shrimp and seasonal vegetables like bell pepper, cherry tomatoes, and corn, this dish is finished with a tangy, aromatic butter sauce with hints of lemon and garlic.
Ingredients (for 2)
- Grits - 1/2 cup
- Water - 1 and 1/2 cups
- Heavy cream - 1/2 cup
- Fresh shrimp, deveined and peeled - 1/2 pound
- Corn - 1/2 cup
- Small bell pepper, diced - 1 - diced
- Cherry tomatoes, halved - 1/2 cup - halved
- Garlic - 2 cloves - minced
- Unsalted butter - 1/4 cup
- Chicken broth - 1/4 cup
- Lemon juice - 2 tablespoons
- Smoked paprika - 1/2 teaspoon
- Salt - to taste
- Pepper - to taste
- Olive oil - 2 tablespoons

Step 1 - 🍚💧🍶Cook grits until creamy using a 1:3 water-to-grits ratio along with heavy cream.

Additional
