Spaghetti Squash Keto Tacos

This delightfully creative twist on the traditional dish combines the fresh and bold flavors of Mexican cuisine with the dietary restrictions of the Keto lifestyle. The star of the show is the spaghetti squash, a fantastic and versatile low-carb option whose great texture and presentation possibilities make it a favorite in Keto dishes. Along with the squash, the avocados, cherry tomatoes, and grass-fed cheese beneath a bright cilantro-lime dressing will add a refreshing and visually appealing finish to the meal as these elements are intensely colored and will pop on any plate (and on Instagram!).
Ingredients (for 2)
- 1 medium spaghetti squash - 1 - halved and seeds removed
- 2 avocados - 2 - diced
- 1 cup cherry tomatoes - 1 cup - halved
- 1 cup grass-fed cheddar cheese - 1 cup - grated
- 2 tablespoons extra virgin olive oil - 2 tablespoons
- Salt and pepper for seasoning -
- Zest and juice of 2 limes - 2 - zest and juice
- 1/2 cup fresh cilantro leaves - 1/2 cup - finely chopped
- 1 garlic clove - 1 - minced
- 1/4 cup extra virgin olive oil - 1/4 cup
- Salt and pepper to taste -
Preparation

Step 1 - đĄī¸đĨđPreheat your oven to 400°F.

Step 2 - đđâ¨Put the halved spaghetti squash on a baking sheet, drizzle it with olive oil, season with salt and pepper, and roast until tender. This will take about 40 minutes.

Step 3 - đđđĨWhile the squash is roasting, combine all of the dressing ingredients in a bowl. Stir until well mixed and then set it aside.

Step 4 - đđ´âī¸After the spaghetti squash has cooled, use a fork to scrape out the flesh into spaghetti-like strands.

Step 5 - đ§đđSpread the squash strands on a non-stick baking sheet, sprinkle the grated cheese evenly on top, and bake until the cheese is bubbly and golden. This will take about 10 minutes.
