This unusual but delicious dessert brings together the Western love for potatoes in a sweet twist inspired by the flavors of Thai cuisine. The grating of the potato into a coarse mash gives it a soufflé-like texture, mixing flawlessly with the sweet coconut and seasonal spices, making a comforting yet exotic dessert.
