This recipe is a Korean-inspired and seasonally-inspired dish that takes advantage of the warm weather. Ingredients (for 2)
- Zucchini - 1 large
- Firm tofu - 1/2 pack
- Carrot - 1/2 small
- Cucumber - 1/2 small
- Soy sauce - 1 Tbsp
- Honey - 1 Tbsp
- Korean chili paste (gochujang) - 1 Tbsp
- Garlic - 1 clove - minced
- Vegetable oil - 1 Tbsp
- Salt - - to taste

Step 1 - π₯ππUse a spiralizer to make zucchini noodles and set aside.

Step 2 - π³π§π₯’Cut the tofu into small cubes, season with salt and fry them in a tablespoon of vegetable oil until crispy.

Step 3 - π₯’π―πMix soy sauce, honey, Korean chili paste, and minced garlic to make the sauce.

Step 4 - π₯π₯πͺCut carrot and cucumber into small matchsticks.

Step 5 - π₯£ππIn a large bowl, mix the spiralized zucchini with the sauce and distribute among two plates.

Step 6 - ππΏπ±Top the zucchini noodles with the crispy tofu along with the carrot and cucumber matchsticks.

Additional
For a non-vegan version, substitute the tofu for chicken or beef. Feel free to experiment with other seasonal vegetables like bell peppers or asparagus. This meal is perfect for hot weather and a great way to get your veggies in.
