This recipe offers a delightful fusion of warm, hearty, and nutritious ingredients for a cold day. The star of our dish, spinach, will bring a vibrant pop of color and load of nutrients, merging seamlessly with familiar flavors of American cuisine.
Ingredients (for 4)
- Spinach - 3 packed cups - roughly chopped
- Feta cheese - 1 cup - crumbled
- Buttermilk cornbread mix - 1 box (about 14.6 oz)
- Eggs - 2
- Whole milk - 1 cup
- Unsalted butter - 4 tbsp - melted
- Extra virgin olive oil - 2 tbsp
- Garlic - 2 cloves - minced
- Red chili flakes - a pinch - (optional)
- Salt - 1 tsp - or to taste
- Black pepper - 1/2 tsp - or to taste
Preparation

Step 1 - 🌡️🔥🍳Preheat your oven to 375°F and lightly grease a 9-inch round or square baking dish.

Step 2 - 🍳🌿🌶️In a large skillet, heat the olive oil and add the minced garlic and a pinch of red chili flakes. Sauté until they become aromatic. Add the chopped spinach and sauté until wilted. Season with salt and pepper to taste.

Step 3 - 🥘💦🥚In a mixing bowl, combine the buttermilk cornbread mix, eggs, milk, and melted butter. Stir them well until they are combined.

Step 4 - 🥘🧀👩🍳Pour half of the cornbread mix into the greased baking dish. Spread the sautéed spinach evenly on top of the cornbread batter. Add the crumbled feta cheese on top of the spinach. Finally, pour the remaining cornbread batter on top, using a spatula to spread it evenly.

Step 5 - 🥘⌛🍴Bake for 25-30 minutes. Check for doneness by inserting a toothpick into the center of the dish. If it comes out clean, the dish is done. Allow it to cool for 5 minutes before slicing and serving.

This bread is wonderful on its own, but you can also serve it with a simple tomato soup or a green salad for a satisfying meal. The kids would love to get involved in the filling part, make sure the spinach is cool before they participate. If you want to make it vegan, use a cornbread mix that is vegan-friendly and replace the feta with a vegan cheese, delicious!
