This recipe is a fusion dish inspired by the American cuisine. We are using seasonal ingredients like asparagus and peas to create a unique pasta dish that's flavorful and nutritious. The dish features a creamy sauce made with white wine, Parmesan cheese and lemon juice that perfectly pairs with the pasta and vegetables.
Ingredients (for 4)
- Pasta (spaghetti or linguine) - 12 oz
- Asparagus - 1 pound - trimmed and cut into 2 inch pieces
- Peas - 1 cup - fresh or frozen
- Unsalted butter - 3 tbsp
- Garlic cloves - 3 - minced
- Dry white wine - 1/2 cup
- Heavy cream - 1/2 cup
- Grated parmesan cheese - 1/2 cup
- Lemon juice - 1 tbsp
- Salt -
- Pepper -
- Fresh parsley - 1/4 cup - chopped
- Olive oil - 1 tbsp
Preparation

Step 1 - 🍝🕰🚰Cook the pasta in a large pot of salted boiling water according to package directions. Drain and reserve 1 cup of pasta water.

Step 2 - 🔥🥦🌱Heat olive oil in a skillet over medium heat. Add asparagus and sauté for 5 minutes. Add garlic and peas and sauté for another 3 minutes. Season with salt and pepper and set aside.

Step 3 - 🍶🧀🍋In a saucepan, melt butter over medium heat. Add white wine and simmer for 2 minutes. Add heavy cream and Parmesan cheese. Cook the sauce, stirring constantly, until the cheese is melted and the sauce is smooth. Add lemon juice and season the sauce with salt and pepper.

Step 4 - 🥣🍝🍲Add the cooked pasta and reserved pasta water to the saucepan with the sauce. Stir to combine and cook for 2-3 minutes, until the sauce is thickened and the pasta is coated with the sauce.

Step 5 - 🍽🍴🌿Divide the pasta among plates, top with the asparagus and peas mixture, and sprinkle with fresh parsley.
Additional
You can add sliced chicken breast or diced pancetta to the vegetable mixture for extra protein. This dish is also great with other spring vegetables such as sugar snap peas, fava beans or garlic scapes.
