Springtime Stir-fried Kohlrabi & Sweet Peas

Embracing the season and using whatever is fresh and available is what Italian cuisine largely stands for. Our star ingredient today is Kohlrabi, a cool-weather plant that blends beautifully with other spring flavors. In this recipe, we are pairing Kohlrabi with sweet green peas and a touch of lemon, altogether bringing a refreshing, crisp, and slightly sweet side dish to your table.
Ingredients (for 2)
- Large kohlrabi - 1 - peeled and cut into matchsticks
- Fresh green peas - 1 cup
- Lemon - 1 - zest and juice
- Extra virgin olive oil - 2 tablespoons
- Fresh mint leaves - handful - finely chopped
- Garlic cloves - 2 - minced
- Salt - to taste
- Black pepper - to taste - freshly ground
Preparation

Step 1 - 🍳🔥💧Heat 2 tablespoons of Extra Virgin Olive Oil in a pan over medium heat

Step 2 - 🍳🧄🔥Add 2 minced garlic cloves to the pan and sauté until they release their aroma

Step 3 - 🍳🥗🔥Stir in the matchsticks of 1 large peeled kohlrabi into the pan and sauté them until they become slightly tender

Step 4 - 🍳💚🔥Mix in 1 cup of fresh green peas to the pan and continue to stir-fry for 2-3 minutes, until the peas are just tender

Step 5 - 🍳🍋🌿Turn off the heat, and sprinkle in the zest and juice of 1 lemon, a handful of finely chopped fresh mint leaves, salt to taste, freshly ground black pepper to taste

Step 6 - 🥗🥄👅Toss the dish to combine all ingredients, test it and adjust the seasoning if necessary
Additional
This is a very flexible recipe. You could swap out the peas for broad beans or add slivers of asparagus. For a non-vegan twist, toss in some Parmesan shavings before serving. Kid-friendly task: Let your little ones help shell the peas or zest the lemon.
