Taking inspiration from the fresh, robust flavors of American summertime cuisine, this recipe will allow you to journey through an array of delightful flavours. Dill, the star ingredient, is coupled with farm fresh tomatoes and corn to create a vibrant, zesty, and refreshingly light dish made for a pleasant day.
Ingredients (for 2)
- Large bunch of dill - 1 - leaves picked and finely chopped
- Olive oil - 3 tablespoons
- Garlic clove - 1 - finely chopped
- Lemon - 1 - zest and juice
- Ears of sweet corn - 2 - kernels removed
- Heirloom tomatoes - 2 - thickly sliced
- Prepared tart shell - 1
- Salt - to taste
- Freshly ground pepper - to taste
Preparation

Step 1 - π‘οΈπ₯β²οΈPreheat your oven to 375Β°F (190Β°C).

Step 2 - πΏππ§Combine the dill, olive oil, garlic, lemon zest and juice in a blender. Blend until smooth, and season with salt and pepper.

Step 3 - π§Ήπ₯§πBrush your tart shell generously with the made dill pesto.

Step 4 - π π½π₯§Arrange your tomato slices and corn kernels in the tart shell already brushed with dill pesto.

Step 5 - π₯π₯§β²οΈBake the tart in the preheated oven for about 25-30 minutes, or until the crust is golden and the tomatoes blister.

Step 6 - πͺπ½οΈπAllow your tart to rest for 10 minutes before slicing. Serve slices with some extra dill pesto on the side.
Additional
This dish can be easily modified to include your favorite seasonal vegetables. You can even add cheese or chicken for a non-vegetarian variation. Engage kids in arranging the tomatoes and corn in the tart. This is a great dish to wow your friends & family at a backyard summer party!
