Ingredients (for 4)
- Large sweet potatoes - 2 - peeled and diced into cubes
- Sushi nori - 4 sheets
- Ripe avocado - 1 - sliced
- Cream cheese - 4 oz. - softened
- Black sesame seeds - 1 tablespoon
- Microgreens - A handful - for garnish
- Oil - 1 tablespoon
- Soy-maple drizzle - 2 tablespoons Soy Sauce, 1 tablespoon Maple Syrup, a pinch of Chilli Flakes
- Salt - to taste

Step 1 - 🥔🔥🧂Preheat your oven to 400°F. Toss the sweet potato cubes in oil, sprinkle with salt, and arrange them on a baking sheet.

Step 2 - 🥔🔥🕒Bake the sweet potatoes for 25 minutes until the edges are crispy.

Step 3 - 🥣🌶️🍁While the potatoes bake, prepare the soy-maple drizzle by mixing soy sauce, maple syrup, and a pinch of chilli flakes.

Step 4 - 🥢🍣🥑Lay a sheet of sushi nori on a bamboo mat. Spread a thin layer of cream cheese on the nori. Place a line of the roasted sweet potato cubes on top of the cream cheese, near the edge closest to you, followed by a line of avocado slices.

Step 5 - 🍱🔄🥢Carefully roll the sushi, using the bamboo mat to help form and shape it. Repeat with the remaining nori sheets.

Step 6 - 🍣🍴🌱Slice each sushi roll into five pieces. Drizzle with the soy-maple sauce, sprinkle with sesame seeds, and garnish with microgreens.
