The sight is a vibrant contrast of colors: golden crispy potato shreds generously speckled with red chili flakes, scattered with bright green spring onions and a hint of white sesame. The dish is served in a black cast iron pan that enhances the colors and makes it picturesque.

A little about this dish

With the chilly winds and feel of early spring, comes the need for a hearty yet refreshing dish! Think Szechuan Province in China to add spice and warmth, contrasted by the iconic Potato through a lens far different from your everyday potato recipes.

  2. Step 2 — 🍳🥔🔥
In a large pan or wok, heat the 3 tbs of vegetable oil on medium-high heat. Add potatoes, spreading them evenly. Stir-fry for about 7-8 mins, or until potatoes are slightly golden brown.

Stir in 2 finely chopped spring onions, 1 tbs of soy sauce, and salt to taste. Fry for another 2 minutes until all ingredients are well combined.
  5. Step 5 — 🍽️🔆😋
Turn off the heat, and garnish your dish with toasted white sesame seeds before serving.

A final fox tip

A great way to make this dish even more flavourful is by adding a drizzle of Chinese black vinegar just before serving. This adds another layer of tanginess to the dish. It's a fun dish to involve kids in, especially in the process of julienned potatoes (under supervision). The humble potato shines in an unexpectedly delightful way in this dish. Enjoy!
