With the chilly winds and feel of early spring, comes the need for a hearty yet refreshing dish! Think Szechuan Province in China to add spice and warmth, contrasted by the iconic Potato through a lens far different from your everyday potato recipes.

Ingredients (for 4)

Preparation

  1. Step 1 - 🥔💦🏁
    Soak 3 large julienned potatoes in cold water for about 20 minutes. Then pat them dry completely using a clean towel.
  2. Step 2 - 🍳🥔🔥
    In a large pan or wok, heat the 3 tbs of vegetable oil on medium-high heat. Add potatoes, spreading them evenly. Stir-fry for about 7-8 mins, or until potatoes are slightly golden brown.
  3. Step 3 - 🌶️🍲🔥
    Add 1.5 tsp of red chilli flakes, 1 tsp of slightly crushed Szechuan peppercorns, and 6 finely chopped garlic cloves. Continue to stir-fry until fragrant.
  4. Step 4 - 🍜🥬🔥
    Stir in 2 finely chopped spring onions, 1 tbs of soy sauce, and salt to taste. Fry for another 2 minutes until all ingredients are well combined.
  5. Step 5 - 🍽️🔆😋
    Turn off the heat, and garnish your dish with toasted white sesame seeds before serving.

Additional

A great way to make this dish even more flavourful is by adding a drizzle of Chinese black vinegar just before serving. This adds another layer of tanginess to the dish.
