A little about this dish
With the chilly winds and feel of early spring, comes the need for a hearty yet refreshing dish! Think Szechuan Province in China to add spice and warmth, contrasted by the iconic Potato through a lens far different from your everyday potato recipes.
Ingredients (for 4)
- Large potato — 3 — julienned
- Red chilli flakes — 1.5 tsp
- Szechuan peppercorns — 1 tsp — slightly crushed
- Garlic cloves — 6 — finely chopped
- Spring onions — 2 — finely chopped
- Salt — to taste
- Soy sauce — 1 tbs
- Toasted white sesame seeds — for garnish
- Vegetable oil for frying — 3 tbs
Preparation

Step 1 — 🥔💦🏁Soak 3 large julienned potatoes in cold water for about 20 minutes. Then pat them dry completely using a clean towel.

Step 2 — 🍳🥔🔥In a large pan or wok, heat the 3 tbs of vegetable oil on medium-high heat. Add potatoes, spreading them evenly. Stir-fry for about 7-8 mins, or until potatoes are slightly golden brown.

Step 3 — 🌶️🍲🔥Add 1.5 tsp of red chilli flakes, 1 tsp of slightly crushed Szechuan peppercorns, and 6 finely chopped garlic cloves. Continue to stir-fry until fragrant.

Step 4 — 🍜🥬🔥Stir in 2 finely chopped spring onions, 1 tbs of soy sauce, and salt to taste. Fry for another 2 minutes until all ingredients are well combined.

Step 5 — 🍽️🔆😋Turn off the heat, and garnish your dish with toasted white sesame seeds before serving.
A final fox tip
A great way to make this dish even more flavourful is by adding a drizzle of Chinese black vinegar just before serving. This adds another layer of tanginess to the dish. It's a fun dish to involve kids in, especially in the process of julienned potatoes (under supervision). The humble potato shines in an unexpectedly delightful way in this dish. Enjoy!
