This Mexican-inspired brunch dish takes traditional and comfort to another level by it's rich flavors and textures. Starring the subtle sweetness of leeks enhanced with the kick of tequila, wrapped in a crispy tortilla giving you a perfect fusion of sustenance and style.
Ingredients (for 2)
- Leeks - 2 - cleaned and finely chopped
- Tequila - 1/4 cup
- Large eggs - 4 - lightly beaten
- Corn tortillas - 2
- Avocado - 1 - sliced
- Salsa - As desired
- Queso fresco - 2 ounces - crumbled
- Olive oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste

Step 1 - 🍳🥬🔥Heat the olive oil in a pan over medium heat. Add the leeks to the pan and sauté until they begin to soften.

Step 2 - 🥃🍳🧂Pour the tequila into the pan, stir well and continue to cook until the leeks absorb the tequila. Season with salt and pepper, remove from heat and set aside.

Step 3 - 🍳🥚🧂In the same pan, scramble the eggs seasoning with a pinch of salt. Cook until they are soft but not too dry.
