This refreshing and nourishing vegan recipe takes inspiration from the rich and vibrant Brazilian cuisine, with a contemporary twist. The key ingredients are vibrant fresh seasonal produce, including pineapple, tomatoes, bell peppers and black beans, beautifully combined with a medley of warming spices, for a taste of the Brazilian warmth in each bite!
Ingredients (for 2)
- Large ripe tomatoes - 2 - finely chopped
- Green bell pepper - 1 - diced
- Yellow bell pepper - 1 - diced
- Cloves of garlic - 2 - finely minced
- Red onion - 1 - finely chopped
- Pineapple - 1 cup - diced
- Jalapeño pepper - 1 - finely chopped
- Canned black beans - 1 cup - drained and rinsed
- Ground cumin - 1 tsp - none
- Smoked paprika - 1/2 tsp - none
- Olive oil - 2 tbsp - none
- Fresh cilantro - a handful - finely chopped
- Sea salt and black pepper - to taste - none
- Lime - 1 - juiced
Preparation

Step 1 - 🍳🌶️💡Heat the olive oil in a large pot. Sauté onion, bell peppers, and garlic until they are soft.

Step 2 - 🥣🌿✨Add ground cumin, smoked paprika, black beans, and half of the chopped tomatoes to the pot. Stir well.

Step 3 - 🔥⏳🥘Reduce heat to low. Let the mixture simmer for about 15-20 minutes, or until vegetables are cooked and flavors meld.

Step 4 - 🍍🍅🌶️Combine pineapple, rest of the tomatoes, jalapeño (optional), and half of the cilantro in a bowl. Add lime juice and a pinch of salt and stir well.

Step 5 - 🌱🧂🥣Season the finished stew with salt and pepper to taste. Divide between two bowls, top with pineapple salsa and sprinkle with the remaining cilantro.

The fun twist here is the pineapple salsa, a nod to Brazil's love for fruits. It's also a great dish for kids to help prepare as they can assist in washing the veggies, stirring the stew and preparing the salsa under supervision. For a different flavor profile, add some shredded coconut to the salsa, or swap the pineapple for mango!
