This recipe gives a tropical twist to the classic skewer. The sweet and tangy pineapple pairs wonderfully with succulent shrimp and the red onions provide a pungent contrast. Adding in seasonal veggies gives a fresh, tantalizing boost to every bite.
Ingredients (for 4)
- Large shrimp - 16 - deveined and shells removed
- Pineapple - 1 - cut into 16 chunks
- Red onion - 1 - cut into 16 pieces
- Bell peppers (assortment of colours) - 2 - cut into 16 pieces
- Olive oil - 1/4 cup
- Cloves of garlic - 2 - minced
- Fresh lime juice - 2 tablespoons
- Chili flakes - 1 teaspoon - (optional)
- Salt and pepper - to taste

Step 1 - 🔥⏳🔆Preheat your grill to medium heat.

Step 2 - 🍚🌶️🍋In a large bowl, combine olive oil, garlic, lime juice, chili flakes, salt, and pepper.
