Inspired by Vietnamese cuisine, we are introducing a twist to the usual bread variety by incorporating blackberries. The tart sweetness of blackberries marries up beautifully with the warm, savory flavor of the bread, creating a wonderful flavor profile that is both unique and delightful.

Ingredients (for 2)

Preparation

  1. Step 1 - 🍇🍋🍚
In a bowl, combine the blackberries and lime juice then sprinkle with the powdered sugar. Let it macerate for 15 minutes.
  2. Step 2 - 🍯🧂🥣💧
In a separate large bowl, mix together bread flour, instant yeast, honey, and salt. Gradually add in the warm water while mixing until a dough begins to form.
  3. Step 3 - 🤲🥖⏳
Knead the dough on a flour-dusted surface until it is smooth and elastic, around 10 minutes.
  4. Step 4 - 🍇🍞🍽️
Roll out the dough into a rectangle and spread the blackberry mixture over, leaving a border. Roll up the dough tightly, pinch the ends and place in a greased loaf pan.
  5. Step 5 - ⏳🍞🌡️
Cover the loaf and let it rise in a warm area for about an hour or until doubled in size.
  6. Step 6 - 🔥🍞⏲️
Preheat the oven to 375°F. Brush the bread with vegetable oil and bake for 30-35 minutes, or until the bread is golden brown and sounds hollow when tapped.
  7. Step 7 - 🍚🍞⏲️
Let the bread cool in the pan for a few minutes before transferring to a wire rack to cool completely. Sprinkle a dusting of powdered sugar before serving.

This bread is excellent for a brunch treat; the presentation alone is enough to impress. Feel free to experiment, even substituting blackberries with raspberries or blueberries. Kids would love to help kneading the dough or spreading out the blackberries. This bread is best enjoyed on its own or with a hot cup of coffee on a cozy rainy day.
