In this quintessentially American dish, we're giving a modern, vegetarian twist to the hearty shepherd's pie. We're enhancing the mushroom's umami flavor with a touch of whiskey and hale & hearty vegetables. The colors and textures make for a wonderful activation for your taste buds.
Ingredients (for 2)
- Mushrooms - 2 cups - roughly chopped
- Sweet peas - 1/2 cup - frozen
- Red bell pepper - 1/2 - minced
- Garlic - 2 cloves - minced
- Russet potatoes - 2 large - peeled and quartered
- Vegetable stock - 1 cup
- Whiskey - 1/2 cup
- Olive oil - 2 tablespoons
- Salt - to taste
- Black pepper - to taste

Step 1 - 🍳🍄🔥Heat 2 tablespoons of olive oil in a pan and sauté 2 cloves of minced garlic until fragrant. Add 2 cups of roughly chopped mushrooms and cook until browned.

Step 2 - 🍲🌶️🥃Add 1/2 cup of frozen sweet peas, 1/2 minced red bell pepper, 1/2 cup of whiskey, and 1 cup of vegetable stock. Simmer for 15 minutes until the mixture thickens. Season with salt and black pepper to taste.

Step 3 - 🥔💧🍴Meanwhile, boil 2 large peeled and quartered russet potatoes until soft. Mash them, adding a bit of cooking water if necessary to get the desired consistency.

Step 4 - 🔥🍲🥔Preheat the oven to 375°F (190°C). Layer the mushroom mixture in a baking dish and top it with the mashed potatoes.

Additional
You can switch the peas with in-season veggies for a different flavor profile or use bourbon instead of whiskey for a sweeter touch. This dish is a perfect way to involve kids in the kitchen, have them help with mashing the potatoes or layering the pie.
