Preparation
-
Step 1 — 🍳🍄🔥Heat 2 tablespoons of olive oil in a pan and sauté 2 cloves of minced garlic until fragrant. Add 2 cups of roughly chopped mushrooms and cook until browned.
-
Step 2 — 🍲🌶️🥃Add 1/2 cup of frozen sweet peas, 1/2 minced red bell pepper, 1/2 cup of whiskey, and 1 cup of vegetable stock. Simmer for 15 minutes until the mixture thickens. Season with salt and black pepper to taste.
-
Step 3 — 🥔💧🍴Meanwhile, boil 2 large peeled and quartered russet potatoes until soft. Mash them, adding a bit of cooking water if necessary to get the desired consistency.
-
Step 4 — 🔥🍲🥔Preheat the oven to 375°F (190°C). Layer the mushroom mixture in a baking dish and top it with the mashed potatoes.
-
Step 5 — 🔥⏲️🍽️Bake for 25 minutes or until the potato top is golden. Let it rest for a few minutes before serving.
A final fox tip
You can switch the peas with in-season veggies for a different flavor profile or use bourbon instead of whiskey for a sweeter touch. This dish is a perfect way to involve kids in the kitchen, have them help with mashing the potatoes or layering the pie.
