This fantastic recipe is a play on the traditional American Clam Chowder but uses a mix of seasonal ocean bounty instead. The warmth of the soup will be perfect for the cold season and the subtle flavors of leek, thyme, and white wine will balance out the seafood to perfection.
Ingredients (for 2)
- Leek - 2 stalks - thinly sliced
- Mixed seafood (like shrimp, scallops, and mussels) - 1 1/2 cups - use fresh or frozen
- Chicken or vegetable stock - 4 cups
- White wine - 1/2 cup
- Thyme - 3 springs
- Heavy cream - 1/2 cup
- Potato - 1 large - diced
- Garlic - 2 cloves - minced
- Butter - 2 tbsp
- Olive oil - 1 tbsp
- Salt and pepper - to taste
- Chopped parsley - for garnish
Preparation

Step 1 - π₯π₯π§In a large saucepan over medium heat, melt 2 tbsp of butter and add 1 tbsp of olive oil.

Step 2 - π³πΏπSautΓ© the thinly sliced leeks in the saucepan until they become soft and slightly golden. This should take about 5 minutes.

Step 3 - π§βπ³π§π²Add minced garlic to the saucepan and cook until the garlic becomes fragrant. This will take around 1 minute.

Step 4 - π₯π₯πΏTo the saucepan, add the diced potato, thyme sprigs, and 4 cups of chicken or vegetable stock. Bring the mixture to a boil and then reduce to a simmer until the potatoes become tender.

Step 5 - π³π²π·Add 1/2 cup of white wine to the saucepan and continue to simmer for about 5 more minutes until some of the alcohol has evaporated.

Step 6 - π²π€π₯Stir in the mixed seafood and 1/2 cup of heavy cream in the saucepan. Continue to cook until the seafood is cooked thoroughly.

Step 7 - π€π₯π½Season with salt and pepper to taste, garnish with chopped parsley and serve hot.
Additional
Since seafood cooks quickly, it's added last to prevent overcooking. Try adding chopped celery or carrots for additional texture and flavor. Interested in a little extra? Add some bacon to it for a smoky flavor. Finally, if you want a dairy-free version, you can substitute the cream for coconut milk for a slightly different but equally delicious dish.
