- Endive - 4 heads - quartered lengthwise
- Parsnip - 2 - peeled and chopped
- Garlic - 2 cloves - finely chopped
- Ginger - 1 inch - peeled and finely chopped
- Soy sauce - 2 tablespoons
- Sriracha sauce - 1 tablespoon
- Toasted sesame oil - 1 tablespoon
- Parmesan cheese - 1 cup - finely grated
- Microgreens - for garnish
- Salt - to taste
- Olive oil - 2 tablespoons

Step 1 - 🔥🍠⏲️Preheat the oven to 425°F. Toss the chopped parsnips with a tablespoon of olive oil and a pinch of salt. Roast them on a baking tray for 20 minutes, or until golden and tender.

Step 2 - 🍳🧄🍃Heat a tablespoon of olive oil in a skillet over medium heat. Stir in the finely chopped garlic and ginger until they give off a fragrant aroma.

Step 3 - 🥬🔥🌶️Add the quartered endive to the skillet and stir-fry for about 3-4 minutes until they begin to wilt. Integrate the soy sauce and Sriracha for an extra flavor punch.

Step 4 - 🧀🥄🔥Line a baking tray with parchment paper. Create heaps of finely grated Parmesan, flatten them, and bake for 5-6 minutes until they turn golden and crispy. Let them cool for a bit.
